Chateau Olivier is one of the historic Grand Cru Classe de Graves estates in Pessac-Leognan, with a moated fourteenth-century chateau and fifty-plus hectares under vine. The kosher Blanc is made vat-by-vat within the estate cuvee program, a Sauvignon Blanc and Semillon serious white Bordeaux.
Mood: mineral, restrained, classified-growth.
Grand Cru Classe white Bordeaux, kosher. Not something you often get to say. Restrained, finely oaked, and built to sit on the yom tov table across from a serious plate of fish.
Tasting Notes
Straw yellow with green flecks. The nose opens with gooseberry, elderflower, lemon zest, and a discreet thread of oak. The palate offers green apple, lime, white peach, a touch of honey, and a long, dry, mineral finish. Medium body, medium-plus acidity, exceptionally well balanced.
Food Pairing
A refined Shabbos and yom tov white. Ideal with roasted halibut, sole meuniere, lemon-and-herb chicken, mushroom risotto, or a goat-cheese salad with walnuts. Also a natural for a Shabbat lunch with grilled fish and bright sides.
