Blanc de blancs means white from whites — all Chardonnay, no red grapes in the blend. Golan Heights Winery makes it by the traditional method, with the second fermentation in the bottle you open.

The driest sparkling on the list. If Asti is too sweet and Prosecco too soft, this is the bottle.
Tasting notes
Green apple, lemon and a fine bready note from the lees. Dry and taut across the palate with a fine, persistent bead. A long, clean, citrus finish.
Food pairing
Oysters aside, this goes with smoked fish, sushi and fried appetisers. A serious aperitif.
