Rollover To Zoom
A zero-dosage Pinot Noir champagne from the Drappier estate in the Aube — kosher cuvee under OU, no added sugar, no chaptalization. Bone-dry, mineral, and unmistakably Drappier.
Mood: Chalk, lemon, austerity.
Our sommelier says
The kosher champagne for the host who thinks Bartenura is a slur.
Tasting notes
Green apple, lemon zest, brioche, chalk dust. Medium-bodied with fine bubbles, bright acidity, layered citrus and white orchard fruit. Long and bone-dry; finishes on saline minerality.
Food pairing
L'chaim with smoked salmon, gefilte fish, raw bar, fish course at Yom Tov lunch.
