Tasting Notes
Pale straw with a lively fine bead. Nose of lemon peel, green apple, chalk mineral and a whisper of toast. The palate is bone dry and taut with citrus, subtle bready lees, and a saline mineral pull. Finish is long, dry and cleanly savory.
Food Pairing
Pours cleanly for HaGafen and shines with the Shabbos fish course — cured salmon, oysters, sushi, ceviche. Also excellent alongside fried foods, dairy pastas and a Sunday brunch spread.
