Tasting Notes
Pale straw with a fine, quick mousse. Nose of lemon zest, green apple, faint toast and a whisper of Xarel-lo mineral spice. The palate is bone dry with citrus, mineral, a hint of green apple and a savory bready note from lees aging. Finish is clean, dry and gently saline.
Food Pairing
A serious fish-course sparkler — pair with oysters, cured salmon, ceviche, sushi. Also excellent with fried foods, latkes, sliders and a mezze spread.
