Rollover To Zoom
Wadi Katlav is the winery's flagship: a full four-varietal Bordeaux-style Judean Hills blend, 40% Cabernet Sauvignon, 30% Merlot, 20% Petit Verdot, and 10% Cabernet Franc from the Nes Harim hillside. Layered, structured, and built to age.
Mood: layered, cedar, ceremonial.
Katlav's calling card, four-way blending of the noble Bordeaux grapes in a Jerusalem-hillside key. This is the bottle for a serious Shabbos meal or a milestone birthday.
Tasting Notes
Dense ruby-garnet, dark at the core. Aromas of blackcurrant, plum, and dried fig, layered with cedar, tobacco, dark cocoa, and lifted floral notes from the Cabernet Franc. The palate is full-bodied and layered, cassis and mulberry framed by graphite spice and firm ripe tannins. The finish is long and structured, warm oak and espresso lingering.
Food Pairing
A serious Shabbos yom tov bottle. Ideal with roasted prime rib, lamb shoulder, veal osso buco, slow-cooked cholent, or a duck breast. Cellars beautifully; opens up with thirty minutes of air.
