Otskhanuri Sapere is an ancient, small-production Georgian red grape rescued from near-extinction. Shimon & Company, the only kosher winery in Georgia, bottles this natural semi-sweet expression, deep-hued, dark-fruited, and gently rounded on the palate.

An indigenous grape that most sommeliers have never heard of. Rare enough to be a conversation piece and delicious enough that no one asks about it after the first pour.
Tasting Notes
Ripe blackberry, black plum, and dark cherry conserve on the nose, with a whisper of violet. The palate is round and plush, with soft black fruit, dried fig, and a touch of cocoa. The finish is gentle, subtly sweet, and long, mineral spice underlining the fruit.
Food Pairing
A crowd-pleaser at the Shabbos table with brisket, kugel, honey-glazed chicken, or a sweet-savory tzimmes. Also a natural with dark chocolate desserts, aged cheeses, and the family cheesecake on Shavuos.
