Katlav Winery was founded in 1998 by Yossi Yittach in the hill village of Nes Harim, west of Jerusalem. Named for the strawberry tree that grows wild in the surrounding forest, Katlav was one of Israel's original boutique wineries, small lots, hand-sorted fruit, and a minimum of twenty-four months in barrel for the reds. The Special Reserve Cabernet is textbook Judean Hills.
Mood: structured, cedar, limestone.
Decant thirty minutes. This is the Shabbos bottle for the guest who reads the label. Small-production Israeli Cab, not a supermarket blend.
Tasting Notes
Deep ruby-garnet, dense at the core. Aromas of ripe blackcurrant, cassis, and black cherry layer with cedar, graphite, dried herbs, and a hint of dark chocolate from extended oak. The palate is full-bodied and dry, with concentrated black fruit, firm ripe tannins, and balanced acidity. The finish is long and savory, espresso and tobacco leaf lingering.
Food Pairing
Classic Cabernet pairings: grilled ribeye, slow-braised short ribs, lamb shoulder with rosemary, or a Shabbos cholent rich enough to handle the tannins. Also beautiful with aged hard cheeses or dark chocolate. Cellars well; will reward another five years in a cool dark closet.
