Tasting Notes
Deep ruby with an aromatic bouquet of ripe dark cherry, plum, dried black fig, and black licorice, layered with cedar, clove, cardamom, and graham cracker. The palate is plush and layered, with plum, blackberry, cedar, and dried tobacco leaf. Finely dispersed, slightly chalky tannins add texture, while a velvet-like mid-palate carries a beautifully balanced finish.
Food Pairing
A serious Shabbos steak wine. Ideal with grilled ribeye, dry-aged Kobe-style cuts, slow-braised short ribs, or roast lamb with rosemary. Also beautiful with aged hard cheeses and dark chocolate.
