Our sommelier says
Deep ruby-purple. The nose is classic Cab Franc - ripe red berry, sweet spice, black pepper, with a quiet coffee-and-vanilla layer from eighteen months in oak. The high-elevation Judean fruit slows down ripening, so the fruit reads ripe but never jammy. Full-bodied with the fine-grained tannin Cab Franc gives when it's grown well, finishing peppery and composed. Decant thirty minutes; serve at cool room temperature with serious food.
