Aura di Valerie Amarone della Valpolicella is one of the very first kosher Amarones, made from partially dried Corvina, Rondinella, and Molinara grapes in Italy's classic Valpolicella DOCG. The grapes rest on wooden racks for months, concentrating everything, before slow fermentation and long oak aging.

Tasting notes
Deep opaque garnet with aromas of dried cherry, prune, fig, cocoa, raisin, and dried herb. The palate is full-bodied and dry (though technically off-dry from the appassimento richness), with black cherry compote, espresso, cocoa, and a warm high-alcohol lift. The finish is very long, warm, and dried-fruit sweet.
Food pairing
Slow-braised short rib, wagyu brisket, Osso Bucco, aged hard cheeses like Parmigiano or aged Manchego, dark chocolate desserts. A serious yom tov or milestone bottle.
