Tarshish, the aquamarine stone, is the Cabernet Sauvignon in Binyamina Winery's The Chosen series, where each wine is named for a stone of the High Priest's breastplate. The grapes come from the Galilee and the Golan Heights, and the wine spends 16 months in French oak before about a year more in the winery's cellar.
Mood: Dark, polished, generous.
Tasting notes
Blackberry, cassis and vanilla on the nose, with cedar and a touch of dark chocolate from the oak. Full-bodied, rich and layered, with black cherry and blackcurrant held up by firm, polished tannins and a fresh streak that keeps it lively. A long finish that opens slowly, dark fruit first and espresso after.
Food pairing
Ribeye, grilled lamb chops, brisket and a slow Shabbos cholent. It also stands up to aged hard cheeses.
