Clase Azul Guerrero is the rarest of the three mezcals, made from wild Papalote agave that grows in the mountains of Guerrero and takes years to mature. The decanter is a deep teal ceramic with a gold medallion, and it is the one people pick up first.
Mood: floral, wild, a little untamed.
Tasting notes
Wild herbs, green pepper and citrus blossom, with smoke sitting underneath rather than on top. The palate is bright and layered: tropical fruit, fresh mint, a little salinity, and a mineral bite. It runs long, dry and peppery, and at 46% it has real presence.
Food pairing
Neat, in a copita or a small glass, with nothing in the way. It goes beautifully with grilled fish, citrus-dressed salads, or a sharp aged cheese. This is a bottle for someone who already drinks mezcal and wants to go deeper.
