Elkosh is Dalton Winery's own parcel in the heart of the Galilee, planted in 2009 at 720 meters near Moshav Elkosh, on chalky soil scattered with black flint and ancient fossils. Only the free-run wine goes into this bottle, and it then spends 18 months in hand-picked French oak barrels.
Mood: Poised, deep, occasion-worthy.
Tasting notes
Berries and black cherry on the nose, with a cool lift of hyssop and wild mint. Full-bodied and elegant, with dark fruit framed by the polish of a year and a half in French oak. A long, composed finish from a wine the winery expects to age well over the coming decade.
Food pairing
Roast beef or lamb, or a cheese board of Gruyere, Comte, aged Cheddar and Gouda. Serve at 64 to 68 degrees F.
