Castel is the winery that proved Israel could make Bordeaux-serious wine, and the Rosé du Castel comes off the same Judean Hills vineyards west of Jerusalem as the reds. The label says Haute Judée, which is exactly where it is from.
Mood: Pale, dry, elegant.

This is a rosé to put on the table with dinner, not to drink by the pool. Give it a real glass.
Tasting notes
Redcurrant, white peach and a faint herbal lift. Dry and taut across the palate, with more structure than the colour suggests. A long, dry, mineral finish.
Food pairing
Roast chicken, grilled salmon, and a Friday-night table generally. It stands up to salmon and to a herbed rice.
