Ephod Winery is the boutique Ashdod project of David Suissa, a French-trained vigneron who came out of the Bordeaux Grand Cru world to plant high-altitude Israeli reds. The Regesh is his entry Cabernet — serious bones, weeknight price.
A deep-purple Israeli Cab with the polish of a French-school winemaker and the warmth of a Mediterranean vineyard.
Sommelier's Note — Don't let the price fool you — this drinks like a wine twice its tag. Sixteen months in French oak gives the Regesh its grown-up spine, the kind of structure you'd expect from a Reserve-tier bottle.
Tasting Notes
Deep purple, with blackberry, black currant, and a thread of green bell pepper on the nose. Toasty oak, cinnamon, and dark chocolate fill in behind. Full-bodied on the palate, ripe black fruit and candied cherries cut by medium acidity and firm, mouth-coating tannins. Long, spicy finish.
Pairing
Built for red meat — ribeye, lamb chops, slow-braised short ribs, hard aged cheeses. Will reward an hour in a decanter.
