A natural amber wine from Kakheti, Georgia, made from 100% Rkatsiteli fermented on the skins in traditional buried clay qvevri — a low-intervention method Georgians have used for over 8,000 years.
Mood: Ancient, earthy, alive.
Sommelier's Note
This is skin-contact wine at its most authentic — no additives, no shortcuts, just grape juice and clay doing what they did for our great-great-grandparents.
Tasting Notes
The nose opens with dried apricot, quince, and orange peel over honey and toasted walnut. Grippy tannins from the skins and pips carry stone fruit, dried herbs, and a hint of tea leaf. A long, savoury finish — nutty, resinous, distinctly Georgian.
Food Pairing
Built for the table. Pairs beautifully with brisket, chicken schnitzel, cholent, roasted vegetables, aged cheeses, and mezze-style spreads. A conversation-starter for Shabbos.
