The Jacob's Ladder is owner Michel Ostreicher's personal barrel selection at Hevron Heights Winery: twelve outstanding barrels hand-picked during a 2012 cellar visit, blended and aged twenty-four months before bottling. A limited-edition Judean Hills Cabernet, bottle number handwritten on the label.
Mood: deep, reverent, cellar-selected.
The bottle for a Shabbos when someone at the table needs to feel remembered. Numbered, aged on purpose, poured slowly.
Tasting Notes
Blackcurrant, dark plum, and pipe tobacco on the nose. The palate is full-bodied and layered, with cassis, black cherry, and warm cedar spice framed by graphite minerality. The finish is long and structured, ripe tannins yielding to leather and dried fig.
Food Pairing
A Shabbos yom tov bottle. Ideal with slow-braised brisket, prime rib, stuffed capon, or lamb shank. Cellars beautifully; open at least an hour before serving.
