Odem Mountain sits at over 1,000 meters on the northern Golan, where volcanic basalt soil and cold nights slow-ripen the fruit. Their Volcanic Merlot leans into that mountain character — plush black-fruit weight braced with cool-climate freshness.
Mood: Plush, mineral, layered.
Tasting notes
Ripe plum, black cherry, cocoa, and a lift of wet stone. Medium- to full-bodied with velvety dark fruit, gentle oak spice, and a firm mineral backbone. Smooth and lingering with soft tannin and a savory volcanic edge.
Food pairing
A natural at the Shabbos table with brisket, slow-braised short ribs, or roast chicken. Also lovely with a hearty mushroom kugel.
