In the glass
Deep, layered. Cassis and black cherry from the Cab, white pepper and violet from the Shiraz, dark chocolate and tobacco from the long oak rest. Medium-full body, firm but polished tannins, a long savory finish. Decant 30 minutes if you can.
From the table
Built for the Yom Tov roast — prime rib, lamb chops, slow-braised brisket, hard cheeses at the end of the meal. Serve at 60–65°F. Will hold and reward another 4–6 years in the cellar.
About the winery
Psagot Winery sits in the Judean Hills outside Jerusalem, founded by Yaakov Berg in 2003. The vineyards are planted on terra rossa over limestone bedrock — the same soils that grew the wines of the Second Temple era — and the cave-aged barrel program has earned Psagot a steady stream of 90+ scores from international critics.
