Rollover To Zoom
Tsolikouri is one of Georgia's oldest indigenous white grapes, at home in the vineyards of Imereti and Kakheti for centuries. Shimon & Company is the only kosher winery in Georgia, and this Premium Dry White brings the grape's floral and mineral character to the Shabbos table in a bright, food-friendly pour.
Mood: bright, floral, ancient.
The white that tells you Georgian winemaking is older than most European traditions. Serve it well chilled with fish, and it holds its own against any Loire.
Tasting Notes
Green apple, quince, and white flowers on the nose, with hints of honey and fresh herbs. The palate is dry and mineral-driven, with citrus zest, pear, and a stony backbone. The finish is crisp and lingering, subtle almond and hay.
Food Pairing
A natural for Shabbos lunch with grilled fish, gefilte fish with a bright horseradish, roast chicken, or dairy meals with soft cheeses and salads. Also excellent with Georgian khinkali dumplings if you can source kosher versions.
