Tasting notes
Deep ruby with aromas of bright cherry, ripe plum, cassis, cedar, and a hint of graphite. The palate is full-bodied and dry, with black cherry, blackcurrant, dark chocolate, and firm structured tannin over a volcanic-mineral spine. The finish is long, elegant, and cellar-worthy.
Food pairing
Prime rib, dry-aged steak, rack of lamb, brisket, aged hard cheeses. A serious cellar Cab for a yom tov main course or a milestone Shabbos.
