Hajdu Syrah is a small-lot California red from Jonathan Hajdu, the shomer-shabbat winemaker at Covenant. Sourced from Sonoma County vineyards and whole-cluster fermented, this is a Rhone-focused Syrah built for the sofa, not the trophy shelf.
Mood: Savory, meaty, layered.
Tasting notes
Blackberry compote, cured meat, black olive, and cracked white pepper on the nose. Full-bodied and layered — dark berry fruit up front, then smoked oak, tapenade, and a whisper of dark chocolate through the mid-palate. Long, peppery finish with grippy tannin and a savory umami echo.
Food pairing
Made for grilled ribeye, smoked brisket, mushroom-forward dishes, and anything off a Shabbos cholent pot. Also drinks well with aged hard cheeses.
