Tasting Notes
Pale straw with a persistent fine bead. Nose of green apple, lemon zest, white peach and a whisper of brioche. The palate is dry with cleanly balanced fruit, citrus and a subtle mineral edge from the Xarel-lo backbone. Finish is refreshing, mineral and clean.
Food Pairing
The Shabbos Brut — pours cleanly for HaGafen, and pairs beautifully with the fish course, sushi, latkes, or a Kiddush spread. Also excellent alongside cured salmon, dairy pastas, and Sunday brunch.
