Late harvest and ice wine
Grapes left on the vine past picking concentrate their sugar, and the wine comes out honeyed without turning syrupy. Herzog makes three - Late Harvest Chenin Blanc, Orange Muscat and Old Vine Zinfandel - alongside Teperberg Impression Late Harvest Riesling and Hevron Heights Eden Quintessence Ice Wine. Yarden Muscat comes in a half bottle, which is the easy one to open for two people.
Sweet reds and fortified
Psagot Dessert Wine and Teperberg Essence Fortress are the port-style pours, dark and warming after a heavy meal. Hacormim Konditon is the spiced, honeyed one people ask for by name. Kesser Concord Grape and Kesser Niagara Blanc are there if you want something simpler and sweeter.
Serving it
Chill the whites hard and pour small. Late harvest whites go with honey cake, apple and anything with almond; the port-style reds want chocolate or a strong cheese. Bicerin Italian Chocolate Liqueur and its white chocolate version skip the pairing and go straight in a glass over ice.
